Happy (Try This) Tuesday!!!
Thought this simple recipe was fitting for this time of year (especially since it snowed ALL DAY, today!)...
When Winter hits, the temperature plummets and the sun rises later... making mornings much harder for me to get tup and out of my cozy, warm bed! Anyone else feel me?
Not to mention, the Holiday Season is upon us, and that means family meals...
Soooooooo, I thought I would share a recipe that helps with both situations!!
EASY EGG BAKE
Here's whatcha' need:
1. 1 1/2 dozen eggs
2. 1C milk
3. 1C sour cream
The original recipe was adapted from an egg casserole, that my mom used to make for holidays, and is intended to feed a group, but is really easy to adjust!
IN FACT, I cut the recipe in half and make part of my breakfasts for the week!
All I have to do is heat it up, in the morning, pour my OJ, and fix my carbs (toast, waffle, oatmeal, etc)! :)
(Saves some time, after I hit snooze & talk myself into getting out from the warm covers!)
OR if you're like me, and you like breakfast anytime of day - use it for lunch or dinner!
Directions (using half recipe):
1. Preheat oven to 350 degrees.
2. Mix 9 eggs, 1/2C milk, and 1/2C light sour cream, in a bowl.
3. Pour egg mixture into baking dish (13x9).
4. Toss in desired add-ins *I add chopped green pepper, turkey sausage crumbles, and shredded cheddar cheese.
5. Bake for 35 minutes.
